"Homogenization" is the process of emulsifying one liquid into another or uniformly dispersing solid particles throughout a liquid to improve consistency, stability, shelf life, flavor and a most of other important product qualities such as:Enhanced texture and taste
How is the homogenizer different from a colloid mill or a high-shear mixer?
The homogenizer imparts higher energy to the liquid than the other two devices. It causes emulsification by creating intense turbulent flow. The colloid mill or high-shear mixer produces strong shear fields. As a rule of thumb, the energy level of a colloid mill or high-shear mixer is equivalent to operating a homogenizer at 4000 psi (275 bar) or less.
